Protected designation for olive oil of the Baux de Provence valley
Olive oil of superior category obtained directly from olives and solely by mechanical means.
This oil is delicate. A nose is marked by notes of tomato leaf. On the palate the attack is soft : an artichoke heart "violet de Provence". The return is long and surprising, dominated by espelette pepper.
Packed in 75 bottles or in can of 25 cl and 5 liters.

CULTIVATION AND PROCESSING :
Biodynamically every step is done with the utmost care, from pruning of the olive trees to botting. The olivade is made entirely by hand. Olives are sorted and deleafed. Placed in boxes, they are brought to the mill. Elegant and complex, our olive oil is not filtered to preserve all the biological and natural richness of its pulp.
