PDO's Les Baux de Provence
Wine with a red ruby colour, it’s brilliant and clear. The nose is discreet and pleasant. It unfolds after aeration on notes of strawberry jam and ripe cherries. We also recognize liquorice. The mouth is balanced, with a nice freshness, all in finesse with a round and melted tannic profile. It ends on a beautiful length.
Wine pairing :
Greedy and fresh, the good match is with a rabbit cooked at the «Provençale » way, with some small potatoes at the olive oil.
Serv at 16 degrees.
Viticulture and Vinification :
The vines are pruned short in « gobelet » on a clay and calcareous soil, the harvest is handmade and during the night. Then it is destemmed and ferment with the whole berry and natural yeast. Maturing for 48 months in stainless steel tank.
