PDO's Les Baux de Provence
Wine with a red ruby color, it’s brilliant and clear. The nose is discreet and pleasant. It unfolds after aeration on notes of strawberry jam and ripe cherries. We also recognize liquorice. The mouth is balanced, with a nice freshness, all in finesse with a round and melted tannic profile. It ends on a beautiful length.
WINE PAIRING :
Greedy and fresh, this wine matches well with a rabbit cooked at the «Provençale » and potatoes sauteed in olive oil.
Serve at 16 degrees.
WINEGROWING AND WINEMAKING :
Short pruning in « gobelet » on a clay and limestone soil. Harvest manually at night, destemmed and fermented in whole berry and with natural yeast. Matuing for 48 months in stainless steel tank.

90% Grenache Noir, 5% Carignan, 5% Syrah
