PDOs Les Baux de Provence
Wine with a ruby color, bright and clear. A complex nose with notes of prunes, liquorice and clove. The attack in mouth is supple and lively, the tannins are melted and precise. A fine wine with a beautiful length and a finale elegante.
Fine and spicy this wine will match well with a rack of grass-crusted lamb and mashed potatoes with olive oil.
Serve at 16 degrees.
WINEGROWING AND WINEMAKING:
Short pruning in "gobelet" on a clay limestone soil. Harvested manually at night, destemmend and fermented in whole berry and white natural yeast. Mauring for 48 months in stainless steel tank.
